Blueberry Juice is an experimental Colombian microlot from Luz Helena Salazar’s Maracay farm in Quindío. This is a coffee where fermentation isn’t just a side note — it’s the very core of the experience.

🧪 What makes this coffee different?
Hand-picked coffee cherries undergo a 72-hour dry anaerobic fermentation with the fruit pulp intact, during which wine yeast and blueberries are added to the process.
This carefully controlled and extended fermentation deepens the flavor, enhances sweetness, and brings out exceptional berry-like characteristics. The result is a precisely crafted and intentionally designed flavor experience.

Luz Helena Salazar is a producer who refuses to settle for mediocrity. At Maracay Farm, she focuses on small lots, meticulous processing, and exploring how fermentation can highlight the best qualities of the raw coffee.
The Castillo variety is known primarily for its resilience to weather conditions and high productivity — but in Helena’s hands it transforms into an elegant, clean, and complex cup.
This coffee is a perfect example of what happens when a traditional variety meets modern thinking and the courage to experiment.
